Roasted Coconut-Sesame Oats with Cherries

Indulge in the stimulating and satisfying properties of oatmeal with this Roasted Coconut-Sesame Oats with Cherries recipe, perfect for kickstarting a demanding day. Pittas will appreciate this nourishing breakfast, but in warmer temperatures, it's advisable to serve it cool or at room temperature to avoid aggravating the pitta energy.

Instructions

Step 1

In a small saucepan, bring 1 cup oats and 3 cups almond milk to a boil.

Step 2

Turn down the heat and simmer until the almond milk is absorbed into the oats, about 15 minutes.

Step 3

In a small skillet over medium heat, dry toast 1/2 cup unsweetened coconut flakes and 1/4 cup sesame seeds until they brown, about 1 to 2 minutes.

Step 4

Remove from the heat.

Step 5

When the oatmeal is finished, top with the toasted coconut, sesame seeds, and 1 cup halved and pitted cherries and serve.
